The Cellar
Over the years the Toniatti cellar has undergone a number of changes in order to keep up to date with developments in the oenological processes and increasing consumer demands. In the past an hydraulic press was used for the pressing process but, due to its small dimension, it was rather inadequate for the processing of certain types of wine. The vinification was carried out in large wooden barrels without any temperature control system, a very important factor in the attainment of fragrance in a wine. Today, the grape pressing is carried out using modern equipment, which can permit a more or less delicate pressing depending on the variety of the grape. The fermentation now takes place in stainless steel tanks connected to refrigeration, allowing the temperature to be constantly monitored throughout the fermentation process.
The purpose of the wood barrels has changed also: no longer great tanks for fermenting the wine but small barrels, made of French oak, which allow to age and refine the wine.important changes have also been made at a bio-technological level. The acquisition of a small laboratory, the use of selected yeasts and the application of high quality biotechnology have all allowed to achieve better wines than in the past.inside the cellar you will find an inviting shop, where it is possible to taste and buy wines, both by bulk or already bottled.
There is a shop in Bevazzana on the road, which leads to the seaside town of Bibione.
